Ingredients
- 1 box chocolate cake mix, plus any eggs, oil, or other ingredients it requires
- 1 tub chocolate icing
- Rum, and lots of it
Directions
Make chocolate cake according to instructions on the box, but throw cooking caution to the wind and replace all the required water with rum. Be prepared for strange things to happen in the baking; as you watch each of the two layers rise like a volcano, recollect that perhaps you used to only replace one quarter of the water with rum… Allow to finish baking, then let cool; the volcanos will flatten and leave smooth calderas, minus the small chunk out of one that your kid couldn’t resist tasting (she will declare it delicious). Exchange stories along the way of chocolate cupcakes delivered to your kid at boarding school on her birthday, a great excitement for her and her schoolmates.
Layer together with icing in between and over the top. Serve with a candle and a round of “Happy Birthday” to the delight of all.
Additional slices can be offered over consecutive nights, such as following chiopino and duck burgers, then wrap up the last two slices for a treat during the journey to remind your kid of home along the road.
